2 cups chopped figs
1 cup all purpose flour
1 cup oats
1/2 cup dark brown sugar
1 tsp. cinnamon
1/2 cup salted butter, cut into cubes
1 large brown egg
1/2 cup 100% cranberry juice
In saucepan over medium heat combine figs and cranberry juice stirring occasionally until liquid is absorbed and mixture has thickened (about 10-15 minutes). Scrape in to food processor and pulse until smooth. Set aside.
Wipe food processor, and then combine flour, oats, brown sugar, cinnamon, butter, and egg. Pulse until nicely combined.
Press half of crumb mixture into an 8x8 inch square pan. Spread fig mixture gently over crumb mixture. Sprinkle the rest of the crumb mixture over top, gently press down.
Bake at 350° for 18-22 minutes. Cool completely. Cut into bars. Great for your kids' lunchboxes!
