Yield: 4 Servings
1 small loaf of crusty, French-style bread
1/4 cup purchased basil pesto
1/2 cup Horizon Organic shredded mozzarella
Cut the loaf of bread in half crosswise to create two sections, each about six inches long. Cut each section in half lengthwise to create four slices. Spread each slice with one tablespoon of pesto, then sprinkle with two tablespoons of shredded mozzarella. Arrange bread slices on a baking tray and place under the broiler for about one minute, until cheese is melted and bubbly. (Watch closely, since broiling time will vary.) Serve hot.
