Here's a great side dish for Thanksgiving, or a roast chicken dinner.
Peel 3 medium sweet potatoes and cut into chunks. Cook in boiling water until tender. Drain, and pour into a baking dish. Peel, core, and slice up 1 1/2 cups of apples and combine with the sweet potato. Pour 1/4 cup of... maple syrup, 1/2 tsp cinnamon, and 1/4 cup of melted butter over the potato and apple mixture. Stir gently until coated. Bake for 30-35 min in a 375 degree oven, stirring gently a few times during cooking. Sprinkle with 1/2 cup toasted walnut pieces and let stand 5 minutes before serving.
