Serves four.
8 large flour tortillas
1 package Applegate Farms Monterey Jack Cheese, cut into strips
1 package Applegate Farms Organic Sliced Roasted Chicken
1 cup salsa
Optional Fillings
1 cup, rinsed and drained black beans
1 chopped tomato
4 chopped scallions
1/2 cup chopped cilantro
*Omit chicken for a vegetarian version
- Heat a large skillet over medium heat
- Lay 4 tortillas down on work surface
- Divide half of the cheese evenly among the 4 tortillas
- Layer chicken, salsa and any additional toppings on top
- Cover with remaining cheese and top each with a tortilla
- Carefully transfer quesadilla to the skillet and cook until golden brown, about 3-4 minutes
- Flip quesadilla over and cook other side until golden brown, about 3-4 additional minutes
- Slice into wedges and serve with sour cream, guacamole and additional salsa, if desired
