Cucumber Raita

A cool and refreshing dip, perfect for all of those homegrown cucumbers. Serve as a dip with spicy, grilled chicken.
4 servings


1/2 medium cucumber, peeled, seeded and cut into matchsticks
Salt to taste
2 tsp. fresh mint, chopped
1/4 tsp. ginger
1 cup Stonyfield Lowfat Plain Yogurt


In small bowl combine yogurt, mint, cucumber, ginger and salt. Fold ingredients together, cover and refrigerator for 1 hour before serving.
