Avocados are considered one of the world’s healthiest foods and high in mono-saturated fat. Using avocados makes the popsicles creamy in texture and taste without using dairy. This combination of flavors is refreshing and decadent.
Ingredients:
2½ cups water
2½ medium avocados, soft (not too ripe) preferably Haas avocados
2 limes, juiced (about 1/3 cup fresh lime juice)
1½ cups honey or agave nectar
½ cup loosely packed fresh mint leaves
Process:
Place all ingredients in a blender and puree until smooth.
Pour into popsicle molds and freeze.
