Kamut Apple Strudel

Recipe courtesy of KAMUT® apple strudel

2 ½ Cups KAMUT® flour
½ teaspoon salt
1 Cup + 2 tablespoons butter
2/3 Cup milk
1 egg yolk
1 quart apple slices
¾ Cup sugar
2 tablespoons butter
Cinnamon to taste

Pastry: 2 1/2 cups Kamut (r) flour
            1 Tbsp sugar
            1/2 tsp salt
            1 cup butter
            2/3 cup milk
            1 egg yolk

Mix all ingredients together with hands until dough is formed. Roll out half of dough onto cookie sheet

Mix ahead of time:
            1 quart apple slices
            3/4 cup sugar
            2 tbsp butter
            cinnamon to taste

Roll out and cover apples with remaining half of dough. Slightly beat egg white and brush on top. Sprinkle with sugar and roll edge to prevent spilling over. Poke holes in dough to allow steam to escape. Bake at 400 degrees until brown on top, about half an hour.
