Ingredients:
1/2 ripe papaya peeled seeded and cut into 1/4 inch dice
1/4 ripe pineapple peeled cored and cut into 1/4 inch dice
1 ripe organic mango peeled seeded and cut into 1/4 inch dice
1 small red onion peeled and cut into 1/4 inch dice
1 organic bell pepper (use red bell pepper) trimmed and cut into 1/4 inch dice
3 yellow chile seeded and chopped
1 tablespoon cilantro finely chopped
1 tablespoon rice wine vinegar
1 tablespoon olive oil
1 pinch salt
Directions:
Combine all ingredients and season to taste. Set aside for 20 minutes while flavors meld. Serve at room temperature or chilled.
