Gluten and dairy free. These muffins have a nice crunch to them thanks to the Envirokidz Peanut Butter Panda Puffs!
1 cup Nature's Path Mesa Sunrise cereal
1/2 cup Envirokidz Peanut Butter Panda Puffs
1 1/2 cup Nature's Path Crispy Rice cereal
1 tsp baking soda
1/2 tsp salt
1/2 cup rice flour
1 cup mashed ripe banana (about 3 medium)
1/2 cup honey
1/2 cup organic chunky peanut butter
2 large free range eggs or egg replacer
1 tbsp organic vegetable oil
1 tsp vanilla
Mix the three cereals, baking soda and salt. Stir in honey and set aside. In a large mixing bowl place rice flour, banana, peanut butter, eggs or egg replacer, oil, and vanilla, stir until combined.
Add cereal mixture to banana mixture, stir. Fill 10-12 muffin cups. Bake at 350F for 20-25 minutes.
