Roasted Sweet Potato Wedges with Sweetpea’s Special Aioli

- 2 cups Organic sweet potatoes, skin on, cut into finger size wedges (2 potatoes)
- 2 tbsp organic extra virgin olive oil -30mL
- 2 cubes Sweetpea Lentils and Root Veggies
- 2 tbsp organic mayonnaise – 30mL
- 1 basil leaf, finely chopped

1. preheat a non-stick baking sheet in 300 F oven (150C), about 5-7 mins

2. toss sweet potatoes with olive oil, place on baking sheet and roast until golden brown, about 25 mins.  Remove from head

3. in a mixing bowl, combine Lentil and Root Veggie cubes with mayonnaise and basil, mix well to incorporate.

4. Serve wedges with aioli on the side and enjoy
