Spring Greens Cupcakes

1/2 cup mashed ripe banana
6 scoops Ultimate Organics™ Greens n' Things®
1 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/4 cup butter, softened
1 tsp vanilla extract
2 large eggs
1/4 cup plain low fat yogurt
 
1. Preheat oven to 350F.

2. In a bowl, combine the Greens n' Things and mashed banana. In a separate bowl, combine the flour, baking soda, salt and stir with a whisk. Beat the sugar, butter and 1 tsp of vanilla at medium speed in a mixer until well blended, about 3 minutes. Add the eggs one at a time, beating well after each. Add the flour mixture to the sugar mixture alternately with yogurt, beginning and ending with flour mixture. Spoon the batter (filling it only ½ way) into 12 muffin cups lined with paper liners. Garnish with pepitas if desired.
