Strawberry Three-Cheese Mold

Guaranteed to make any cheese board more fun and festive!

Makes 10-12 servings for party cheese board

   8 oz. cream cheese, room temperature
   1/4 cup crumbled bleu cheese, room temperature
   1/2 cup goat cheese (log type), room temperature

   1 tablespoon balsamic vinegar, salt & freshly ground pepper
   1/2 pint Driscoll's strawberries
   Several basil leaves; rinsed, dried and ripped

Line a two cup bowl with plastic wrap, letting the plastic hang over the edges slightly. Set aside.

Put the three cheeses in a mixing bowl and combine them well.  Add vinegar and combine well. Add salt to taste. Give it a few grinds of fresh pepper. Transfer mixture to the plastic lined bowl, cover and refrigerate until firm.

Half-hour before serving, remove the mold from the refrigerator to soften slightly and turn out onto a serving platter. Leave plastic wrap on.

To Serve: Remove plastic wrap. Press strawberry slices all around perimeter and over surfaces in attractive pattern. Grind some fresh pepper over the berries and scatter the ripped basil on the top.
