Stuffed Summer Eggs

4 hard boiled eggs, shelled
1/4 tsp curry powder
1/2 cup finely grated cheddar cheese
1/4 cup milk
salt and freshly ground black pepper

For garnish:
A few lettuce leaves
Chopped chives

Cut the boiled eggs in half lengthways and scoop the yolks into a bowl without breaking the whites.  Mash the yolks with the curry powder, cheese and milk; mix until smooth.  Season with salt and pepper.  Spoon the mixture back into the egg white halves and arrange on lettuce leaves on a serving dish.  Sprinkle with chopped chives.

Serves 4 as a first course, 2 as a light meal.
