Sweet Potato Pie

One 9" unbaked pie shell

2 1/2 cups mashed, cooked sweet potatoes
1 cup milk
2 eggs, well beaten
3/4 cup maple syrup
1/2 tsp salt
1/2 tsp nutmeg
4 Tbsp butter, melted
1/2 tsp cinnamon
1 tsp rum flavor

Preheat oven to 425º.  Combine ingredients in a large bowl and beat until smooth and well blended.  Pour into 9" piecrust (filling should be at least 1/4" below the rim) Bake for 10 minutes then reduce heat to 300º and bake for about 50 minutes or until the filling is firm. Makes 8 servings.
