Tofu Turkey

Ingredients:
5 pounds firm tofu
Four cups of your favorite bread stuffing
1/4 cup sesame oil (toasted sesame oil is optional)
1/4 cup tamari
2 tablespoons nutritional yeast

Process:

  • Mash the tofu, or blend in a food processor (add optional nutritional yeast if desired)
  • Drain in a colander for 1/2 hour
  • Place the tofu aside and clean the colander
  • Line the colander with wet cheese cloth and pat the tofu into it, leaving a well in the middle for stuffing
  • Place your favorite stuffing inside
  • Oil a cookie sheet or lasagna pan and placing it upside down over the colander, flip the whole thing over and remove the cheese cloth 
  • You may leave it round or pat it into an oval
  • Baste it with equal parts of tamari and sesame oil 
  • Bake in 400 degree oven for one hour and fifteen minutes, basting every fifteen minutes (this forms a golden "skin") on the surface.
