Tomato, Basil and Garlic Crostini with Fresh Mozzarella

Makes 32 appetizers

Crostini are small, thin slices of toasted bread, which are usually served brushed with olive oil. In this recipe, fresh basil and mozzarella are combined with basil and garlic diced tomatoes to make one mean crostini!

Ingredients:
32 slices French bread, 1/4 inch thick
2 tablespoons olive oil
2 cans (14.5 ounces each) Muir Glen® organic diced tomatoes with basil and garlic, drained
2 tablespoons chopped fresh basil
1/2 cup diced fresh mozzarella cheese
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
1.  Heat oven to 425°F. Place bread slices on ungreased cookie sheets. Brush oil on slices of bread.
2.  Bake 4 to 5 minutes or until very light golden brown.
3.  Stir together tomatoes, fresh basil and cheese in small bowl. Place about 1 tablespoon mixture on each warm bread slice. Sprinkle with salt and pepper.
