This unusual combination is surprisingly delightful and refreshing. The sweet and cool watermelon and mint are complemented with the saltiness of feta cheese, truly a palette pleaser.
2 vine ripe red and 2 yellow tomatoes cut into wedges
1/2 euro cucumber, sliced in 1/4 inch half moons
10 basil Leaves
3 cloves garlic, minced
1/2 red onion, sliced
Salt and pepper to taste
2 tbs. lemon juice
3 tbs. fresh mint, chopped
1/2 cup Stonyfield Farm Lowfat Plain Yogurt
1/2 cup feta cheese
2 cups seedless watermelon, cubed
Mix together watermelon, tomatoes, cucumbers, and basil. Fold together garlic, lemon juice, yogurt and mint. Place watermelon mixture into serving dish or divided between salad plates. Drizzle the dressing over salad. Decorate with red onion, crumbled feta, salt, and pepper. Reserve a basil leaf for the top of the salad or salads.
