To Bill Scott, it's all about being part of a transformation.

An organic vegetable gardener for about 50 years, Scott finds satisfaction in making compost that feeds his garden soil and in watching seeds that he plants grow into food for his plate.

"We get to the place where we feel so dependent on other things and that we have to control everything," said the chemistry professor at Indiana University-Purdue University Indianapolis. With a garden, he said, "I can play a role, but I don't have to be totally in control. I can witness this cycle and be part of it on a spiritual level.
